It is a native Apulian red grape variety imported into Italy by the Greeks. This grape contains a high polyphenolic charge, which, by dyeing the berries with an intense color, makes them appear black. Another characteristic of these clusters is the late ripening towards the beginning of October. The aging of 30% of the wine in large barrels gives it an elegant tannic note.
In the glass we appreciate a beautiful ruby red color tending to garnet.
The nose opens a rich and intense bouquet of blackberry and cherry in alcohol with spicy notes.
The palate is enveloped in a full and enveloping taste with an elegant tannic note accompanied by a satisfying savory note.
Pairing: meat dishes, game, lamb, guinea fowl and roasts.
